Vegetarian Borsch with Vushka (dumplings).

Method 

Step 1
Dried white mushrooms should be soaked in water for at least 30 mins. Two beetroots should be washed and placed in a saucepan. Let the water boil for about an hour before you simmer the beetroots. Set aside. 

Step 2
Combine the red beans and 150ml cold water in a saucepan. Allow them to cook for approximately 1 to 1.5 hours. Set aside. 

Step 3
Combine cabbage, carrots and onions with 3 litres water. Add parsley, allspice bay leaves, salt, and pepper to taste. Cook on medium heat for 30 minutes.

Step 4
While you wait, prepare the dough to make the vushka. In a large bowl, mix 300g flour with 150ml of water. Add 2 tbsp oil and 3 tsp salt. Knead dough till elastic. Keep covered and put aside.

Step 5
Three potatoes should be peeled and cut into small pieces for the vushka stuffing. Put the potatoes in a saucepan. Cover with water. Boil for approximately 25 minutes. Once the potatoes have been boiled, you can mash them.

Step 6
Slice an onion. Slice 200g champignons or oyster mushrooms, 100g fresh white mushrooms or frozen white mushrooms, and 50g soaked white mushrooms into small pieces.

Step 7
In a large frying pan heat 2 tablespoons of oil. Add the mushrooms and onions, and spread them out. Salt the mushrooms and fry them until they are dry.

Step 8
Mix mashed potatoes and fried mushrooms together in a bowl. The stuffing for the Vushka is prepared.

Step 9
Dust a work surface with flour and begin to roll out the vushka dough. The dough should be approximately 9.5cm thick. Place the potato- and mushroom mixtures on the dough circles. Fold in half the dough, encasing it with the filling. Form a vushka by pinching to seal the edges.

Step 10
In a saucepan, bring the salted water to a boil and then cook the vushka for 3 minutes. The prepared vushka should be placed in a bowl.

Step 11
Peel and grate the two boiled beetroots and sprinkle with lemon juice, 1 tsp sugar and ½ tsp salt. Let rest for at least one hour.

Step 12
Remove all vegetables from the stock. You can discard everything but the carrots. Then, you can grate them on a large grater. The vegetable stock can now be topped with grated carrots, boiled beans and beets. Let everything cook together for 10 min. 

Step 13
Put five to six vushkas into a bowl, and then add the prepared borsch broth.
